Italian Wheat Sourdough Bread

What are the benefits of sourdough bread? Besides the taste? Humans have been eating sourdough bread since they developed the ability to grind grains into flour. You could not go to the store to buy yeast. The only way to use yeast was to scoop some off of any brewing beer vats or other fermented drinks. So none the less, the sourdough starter was created in order to help leaven bread and take it from its pasty dense water and flour beginning, closer to its today airy and light invention. Not only is there is a taste benefit to sourdough but there is the dietary benefit of the grains fermenting and allowing for a breakdown of carbohydrates and sugars during the fermenting phase. However, this is only valid on dough that is left to ferment for over 12 hours. The grains become partially digested and thus easier for your body to digest and break down the grains. White Sandwich Gluten Free Sourdough Bread

I was hoping to create a basic sour dough loaf, that was the expected white bread feel and taste. It would be great for french toast, grilled cheese, sandwiches, and all those other yummy things that white bread is so great for. I was also hoping to make it easy for folks that don't want to have 50 different types of grain flours in their pantry. Or for folks who like to use an all purpose gluten free flour blend preferably. This bread can be made using any cup for cup gluten free flour blend. Or a blend that contains xanthan gum and is recommended for bread. I particularly like to use a blend called Better Batter. It is my most favorite flour blend, the best I have used. However the next recommended flour blends would be GFJules or Cup4Cup or President's Choice GF Flour found in stores carrying the President's choice brand. Or a home made blend made from rice flour as the base will work. Rice flour is the one used in the sourdough starter so it is recommended. If
